Bring in the BBQ!

The weather outside is rubbish, so why not bring the barbeque indoors?

These bacon burger dippers are great to enjoy as a side, or, why not pack them up with your picnic when the weather improves?

Ingredients

  • 1 tbsp American-style mustard
  • 60g Co-op grated mild Cheddar
  • 1 medium gherkin, finely chopped
  • 1 small red onion, finely chopped
  • 500g Co-op Hereford beef mince
  • 6 rashers Co-op smoked streaky bacon
  • 12 tbsp ketchup or Co-op hamburger relish

Method

  1. Set the oven to 200°C/fan 180°C/Gas 6
  2. In a bowl mix the mustard and Cheddar with the chopped gherkin and onion
  3. Divide the beef mince into 12 and shape into flattened balls. Spoon an equal amount of the cheese mix into the centre of each and carefully wrap the meat around, pinching the ends and rolling back into a ball
  4. Wrap 1/2 rasher bacon around each burger, secure with a cocktail stick and cook on a baking tray for 20-25 mins
  5. Finish off on the barbecue for a minute or two to add some smoky flavour
  6. Serve with ketchup or hamburger relish, to dip

Supplier Spotlight: Powder Monkey Brewery

If you’ve sampled our very own Welcome brew – the “Co-Hop Welcome Back” hazy pale ale, then the chances are you’ve come across our latest Supplier Spotlight already!

Set up in the wake of the pandemic on May 17th 2021, Powder Monkey Brewery has quickly “hopped” up the favourites list among our local customers – and we can see why.

All in the name

We had to ask, where did the name Powder Monkey come from? It turns out, the Brewery’s co-founder, Andy Burdon, discovered the building where the brewery now operates back in 2019. Previously it was an historic naval gunpowder store in Priddy’s Hard, Gosport.

Despite the store being dark, derelict and empty for more than 50 years, Andy’s vision was bright and he wanted to create a brand that kept the building’s history alive. The name Powder Monkey was born – a name that relates to the boys who would have carried gunpowder to the guns on board ships.

Brewing success

Andy then recruited Mark Hamblin as Head Brewer, and together, they spent many hours developing the working side of the brewery and its equipment, until its first beers were brewed in 2021.

Since opening the brewery, Powder Monkey has doubled its capacity thanks to investment in more tanks for its craft beers. Today, it works as a production facility, but visitors can also make use of the new visitor’s centre, shop and tasting bar.

What was their secret to early success? Marcus Hunt from the sales team said: “The brewing world is quite collaborative, which means we can work together and share ideas through a mutual passion to make the best beers people can buy.”

Far from all at sea

It is this working together attitude that Powder Monkey also sees as ways of navigating (if you’ll pardon the nautical pun!) any rough waters (sorry!).

Marcus continues: “Of course there are challenges, like there are in any business. But, the great thing about collaborating is that you can identify problems as they come along and tackle them head-on. Usually someone else out there has dealt with a similar situation – or they warn you that something might become an issue.

“We learn as we grow, take advice from others, adapt and overcome!”

Nautical themes

The name itself is a great way of keeping the brewery’s building alive – but so too are the goods within.

“We’ve recently launched a new Pilsner called Bravo Zulu” Marcus said. “It’s an old naval term someone would say, which means ‘well done’.

“There’s also the Drunken Sailor and, our best-selling beer, Drop Anchor. That’s a great one for someone who’s just getting into craft beer and taking their first sips!”

A Welcome addition

And, just as aligned with Welcome stores’ commitment to reducing food waste, nothing is wasted when it comes to the brewing process – as the spent grain is picked up by a local farmer who feeds it to his pigs!

So what’s next for Powder Monkey?

“Apart from the Drunken Sailor, which contains lactose,  all our beers that we make are Vegan friendly” says Marcus. “However, we’d really like to expand our Gluten-free range and there are a couple of beers being trialled soon – so watch this space!”

Supplier Spotlight: Beaulieu Chocolate Studio turns 17!

In the latest installment of our “Supplier Spotlight” series, we caught up with Beaulieu Chocolate Studio as they celebrate 17 years in the business – and how they stop their chocolate from melting in the summer heat!

Sweet dreams!

Beaulieu Chocolate Studio opened in July 2006 after founder, Trevor Smith, opened the chocolate shop in the old village patisserie on the Beaulieu estate.

Hand-made chocolates have been a part of the village since the early 1980s but Trevor had dreams of creating artisan and luxury chocolate ranges.

Today, the studio makes a range of over 30 filled chocolates, with new flavours added all the time, and a wide range of original chocolate bars and gifts.

Trevor says: “From the smallest pocket-money chocolate rabbit to the most luxurious chocolate box gift, every chocolate wish is fulfilled.”

It is the long heritage of chocolate-making in Beaulieu that prompted Trevor to divide his shop into two. One half is the workshop at the back where the chocolates are made and in the front half is the shop where they are displayed and sold.

His vision was to make an original range of hand-made chocolates on the premises and in view of the public, who can watch and enjoy the chocolate-making process as it happens.

French inspiration

Trevor is from the New Forest, but he lived in France for 8 years, where he trained as a baker and chocolatier – and that is where his ideas for the chocolate shop originated.

“Over there, it is not unusual to see various artisan chocolate shops and workshop-style cafes where people can enjoy sampling local chocolates on offer – and see how it’s made” Trevor said. “It’s all part of the experience – and that was something I wanted to bring home to the New Forest!”

The Chocolate Studio produces everything by hand using fresh ingredients that are locally sourced wherever possible – and it is that shared ethos that makes Trevor’s chocolates a “Welcome” addition to our stores.

Keeping cool

As the summer months are now upon us, what is Trevor’s secret to making sure chocolates are only melting in the mouths of customers – and not spoiling beforehand?

“Hot summers can be a challenge” he says “but air conditioning has come to our rescue many times – and it’s the only way we can make sure everything stays at the right temperature!”

On Saturday afternoon, we gave a very berry welcome to Laura from New Forest Fruit at our Brockenhurst store! Not only did customers and staff get to try a tasty new treat, but we also heard about all the environmentally friendly methods used at New Forest Fruit.

Environmentally friendly business      

Based in Beaulieu, New Forest Fruit has grown strawberries on the same site for over 15 years. Sustainability and the environment are at the forefront of the decisions made. One method used is specially designed sensors placed within the strawberry crops. These sensors indicate the humidity, temperature, and moisture levels of tunnels. The information provided allows the team to adjust the conditions within the tunnels, and as a result, the plants are healthier, which helps to reduce wastage.

A brand-new healthy summer snack

The summer is officially strawberry season, and there’s nothing better than enjoying deliciously sweet berries! However, there’s also a demand for dried fruit as a healthy ‘on-the-go’ snack alternative. This is something New Forest Fruit has considered, and as a result, launched a new product – called Pulsed Dried Strawberries.

The best thing about this product is – no added sugar or preservatives, only strawberries grown on the farm. These can be crushed and sprinkled over cereal or used in baking. Plus, pulsing splits the cells of the strawberry, so the berry can rehydrate and is ideal for infusing in drinks such as sparkling water or a celebration glass of prosecco! If that wasn’t enough, the packets are 100% compostable – so you can give a little back to nature too.

Supplier spotlight: New Forest Fruit Company

It’s June! And the time is “ripe” for soft fruits. In our latest supplier spotlight, we spoke to East Boldre’s New Forest Fruit about sustainability pledges, technology-firsts to introduce new ways of farming using traditional methods, and even robot pickers.

Nestled in the heart of the beautiful New Forest National Park, there is a special kind of fruit farm, aptly called New Forest Fruit. The farm is situated over three sites which span eighty hectares.

New Forest Fruit is now in its thirteenth year of trading

The main crop is strawberries, which are sold to leading supermarkets, local farm shops, restaurants and greengrocers. A small amount of raspberries and blueberries are also grown, but these are only sold locally. The company is led by owner Sandy Booth who has been involved with NFF since 2008, fully taking over as CEO in 2018. Sandy’s team consists of several close-knit departments that cover every aspect of the business and give the company the feel of being family-run.

Like many businesses, the New Forest Fruit farm is embracing technology

It became the first company in the UK to be involved in trials of traceability technology – a process that allows businesses to track food at every single stage of the production process. They also use robots used to apply a UV treatment for mildew at night. Not only is technology being used to improve and enhance the soft fruit but it’s also helped address other areas of the business too.

It means the fruit can be picked at the perfect time, and the business isn’t hindered by labour shortages – something else that affects so many fruit farms like theirs. Being a home-grown British fruit farm, the team at New Forest Fruit takes its eco-friendly pledge very seriously. The company recently produced a sustainability report to highlight all the measures implemented to support this.

The environment is at the heart of all the decisions made

Some of these measures include a management system for all the hedgerows on the farm so that wildlife corridors are maintained and can provide shelter. This includes laying 240m of hedgerow this year. There are also bat and bird boxes around the farm. This season there have been 3000 apple trees planted to promote the biosphere in and around the farm. Three on-site reservoirs to ensure it uses its water supply, which limits the amount that’s taken from the rivers. Plus, rain gutters on the strawberry tunnels feed directly back to the reservoir. The farm uses Integrated Farm Management, which is marrying traditional techniques of farming with the latest innovations and enabling a whole farm approach.

Plus a brand new product has been launched this month that uses any second-class fruit which is turned into a delicious ‘pulsed’ dried strawberry snack! Pulsed dried is special as these berries will rehydrate when added to a glass of champagne, sparkling wine or gin & tonic. They also come in compostable packaging.

If that wasn’t enough, the farm has also invested in three electric vehicles and two electric forklifts. Some on-site solar panels provide electricity to the Packshed and they recycle and reuse everything they can – all the coir from the strawberry crops is reused for the early-season asparagus.

Supplier Spotlight: The Tomato Stall, Isle of Wight

British Tomato Fortnight runs from 29th May to 11th June – and what better way to celebrate than by talking to our very own British tomato growers and Welcome stores’ supplier, The Tomato Stall, otherwise known as Isle Of Wight Tomatoes.

Beginning life just over 15 years ago when team tomato headed off to their first farmers market, customers quickly realised that The Tomato Stall had some of the best produce around.

Of course, team tomato, based at Tomato Stall’s HQ in Arreton on the Isle of Wight, will not give away all their trade secrets. But, they say the island is the perfect place for tomato growing because the weather and climate allows for plenty of variety and most flavourful fruits.

In fact, the Isle of Wight is one of the sunniest places to live – and you need plenty of sunshine for the tastiest tomatoes. According to Met Office data, the Isle of Wight sees the most hours of sunshine each year, with 1,923 hours recorded in 2022. Plus, the Island gets an average of 37 hours of sunshine per week – far outstripping the rest of the UK’s 29-hour average.

But, apart from producing some of the best-tasting fruit, what is it that’s so great about the Tomato Stall? Well first, they are all about zero waste – and that’s a massive tick in the box for us!

Using local suppliers is also a key part of that sustainability pledge, as it reduces the need to transport goods far and wide – plus, there’s nothing quite like enjoying products from within a stone’s throw of our front door!

All tomato plants are recycled to create rich compost that enriches the organic soil to grow even more yummy tomatoes. The tomato farm also uses rainwater harvesting features so that it stores rain to irrigate crops all year round.

If that wasn’t enough, the Isle of Wight itself is an accredited biosphere reserve – making it an even-more-perfect location for growing fruit. It allows for things like natural predators to balance ecosystems, and control pests without the use of chemicals that can be harmful to humans and the planet.
